Hermitage - 2021
Winemaking
The winemaking principles are identical to those of Crozes Hermitage. Only the terroir expresses itself. No-input vinification, light extraction. Maceration is longer in order to more finesse and elegence. The wine is then aged in new demi-muids (600L barrels) for 18 months.
TASTING
Colour: intense garnet-red with brilliant ruby highlights.
Nose: expressive and generous, marked by aromas of fresh black fruit such as blackcurrant, blackberry and spices such as black pepper and a hint of nutmeg. A nose of great elegance.
Palate: a fresh entry, evolving into a complex, generous mid-palate. We find aromas of fresh black fruit and spices such as blackcurrant, blackberry and spices. On the finish, we find a silky tannic structure and a salivating freshness that lengthens this wine.
PAIRING
This fresh, concentrated, gourmet wine goes perfectly with generous cuisine :
- Roast rack of beef with foie gras jus and christophine purée.
- A beef fillet hay-smoked from Mézenc with steamed carrot on a bed of hazelnuts and leeks.
- Farmhouse pork chop with tarragon braised endives.
AGEING
This wine can be drunk nicely decanted today, and can also be enjoyed in 10 to 15 years.
